About the Department

The department of Food Technology was established in the year 2018. The courses are designed to impart knowledge on various aspects of food processing, food preservation, food chemistry, food quality, food safety and marketing aspects of food and food products. This program offers under graduate level class work and research opportunities related to food process technology, food microbiology, edible oils, engineering design, post-mortem biochemistry of muscle foods, proteins and enzymes, food rheology, and beverage science.

Its primary objective is to produce competent food scientists and technologists who can take leading roles in improving the socio-economic status of regional people. The department is also intended to provide technical support to farmers and entrepreneurs to establish small scale industries. The curriculum framed us in such a manner that by the time the student completes this degree they grow multi-dimensional fit to work in research, teaching and industry.

Department of Food Technology

Dr. S. Kailash is currently serving as Professor and Head of the Department of Food Technology at Paavai Engineering College (Autonomous), Paavai Nagar, Pachal, Namakkal District, Tamil Nadu, India. He is a seasoned academician and researcher with a strong interdisciplinary background spanning chemical engineering, polymer science, and applied materials research.

He obtained his B.Tech in Chemical Engineering from Erode Sengunthar Engineering College in 2005 and completed his M.Tech in Polymer Science and Engineering from Anna University, Chennai, in 2008. He earned his doctoral degree in 2015 from Anna University, Chennai, with a research focus on Polymer-Based Splinting Materials, contributing significantly to applied biomedical and functional polymer research. As part of his doctoral and post-doctoral research endeavors, he has successfully guided Ph.D. research scholars in the area of Schiff base synthesis, reflecting his expertise in advanced polymer chemistry and material functionalization.

Dr. Kailash possesses over 17 years of teaching and academic leadership experience, demonstrating excellence in curriculum development, academic administration, and outcome-based education. His research contributions include 8 publications in reputed international journals and 10 research papers presented at national and international conferences, highlighting his active engagement with the global research community.

In addition to teaching and research, he has been extensively involved in consultancy services and industrial testing activities, strengthening academia–industry collaboration and promoting practical, application-oriented learning. He has successfully guided 30 undergraduate (UG) projects and 2 postgraduate (PG) projects, mentoring students toward research aptitude, innovation, and professional competence.
Dr. Kailash has been the recipient of research funding from prestigious agencies such as Tamil Nadu State Council for Science and Technology (TNSCST) and Council of Scientific and Industrial Research (CSIR). In recognition of his early research excellence, he was awarded the Young Scientist Fellowship in the year 2012.

He is an active Life Member of leading professional bodies, including the Indian Society for Technical Education (ISTE) and the Institute for Engineering Research and Publication (IFERP), through which he continues to contribute to professional development, research dissemination, and academic networking.

Dr. S. Kailash’s academic leadership, research acumen, and commitment to quality education continue to play a vital role in advancing the Department of Food Technology toward academic excellence, and innovation.

Laboratory Facility

Food Processing and Preservation Laboratory

This laboratory provides hands-on exposure to modern food processing and preservation techniques using pilot-scale unit operations. Students design and operate systems for handling biological raw materials to develop safe, stable, and value-added food products. Emphasis is placed on sustainable processing, shelf-life enhancement, minimal processing technologies, and preparedness for emerging challenges in the food industry such as clean-label processing and food security.

Fluid Mechanics Laboratory

The fluid mechanics laboratory strengthens the understanding of fluid flow behavior relevant to food and process industries. Students gain practical experience in measuring flow rates, pressure drops, and frictional losses in pipes and fittings. The lab enables learners to analyze pumping requirements, select suitable fluid transport equipment, and apply principles essential for the design and optimization of processing, refrigeration, and utilities systems.

Instrumental Methods of Analysis Laboratory

This laboratory offers comprehensive training in modern analytical instrumentation used in food, pharmaceutical, environmental, and industrial analysis. Students develop skills in sample preparation, calibration, method development, and data interpretation using advanced instruments. The lab promotes analytical thinking and supports quality control, regulatory compliance, and research-oriented problem solving.

Fruits Vegetable Processing and Packaging Laboratory

The laboratory focuses on post-harvest handling, processing, and packaging of fruits and vegetables to minimize losses and improve market value. Students learn extraction, pulping, dehydration, and formulation of value-added products. Advanced equipment such as freeze dryers, vacuum ovens, and vacuum packaging systems enable exposure to innovative preservation methods and product development practices.

Food Analysis Laboratory

The food analysis laboratory enables students to evaluate the quality, safety, and nutritional attributes of food and agricultural commodities. Practical sessions cover chemical, physical, and sensory analysis along with detection of contaminants and adulterants. The lab supports traceability, regulatory compliance, and product standardization aligned with national and international food safety standards.

Testing of Packaging Materials Laboratory

This laboratory is designed to assess the performance and suitability of packaging materials for various food products. Students gain experience in evaluating mechanical, barrier, and physicochemical properties of packaging materials. The lab encourages the selection of sustainable, intelligent, and active packaging solutions to enhance product quality and shelf life.

Food Process Engineering Laboratory

The food process engineering laboratory integrates engineering principles with food chemistry, microbiology, and nutrition to design and optimize processing operations. Students work on innovative and clean processing technologies aimed at improving efficiency, safety, and product quality. The lab supports experimental learning for equipment design, scale-up studies, and sustainable processing solutions.

Microbiology Laboratory

This laboratory equips students with practical knowledge of food-related microorganisms and their role in food spoilage, safety, and preservation. Students practice isolation, culturing, staining, and identification techniques, along with hygienic handling and safety protocols. The lab emphasizes microbial control strategies essential for food quality assurance and preservation.

Food Chemistry Laboratory

The food chemistry laboratory enables students to understand chemical reactions and interactions among food components during processing and storage. Experiments focus on compositional analysis, reaction kinetics, and quality changes in foods. The lab fosters analytical skills to enhance desirable changes and control undesirable reactions in food systems.

Heat and Mass Transfer Laboratory

This laboratory provides practical exposure to heat and mass transfer operations commonly encountered in food and process industries. Students study conduction, convection, and radiation, as well as mass transfer phenomena such as diffusion and phase equilibrium. The lab prepares students for the design, operation, and optimization of complex equipment like dryers, evaporators, distillation columns, and extractors.

Dairy Engineering Laboratory

The dairy engineering laboratory familiarizes students with milk processing, preservation, and value addition technologies. Practical training includes quality evaluation, processing of traditional and modern dairy products, and equipment operation. The lab supports innovation in dairy product development and efficient utilization of dairy resources.

Baking and Confectionery Laboratory

This laboratory introduces students to scientific principles underlying bakery and confectionery processing. Practical sessions cover formulation, processing, preservation, and quality evaluation of baked and confectionery products. The lab emphasizes process optimization, shelf-life improvement, and incorporation of emerging trends such as functional ingredients and automation in bakery production.
